Dutch Oven Recipe: Ronnie's Squashed & Stuffed | Ronnie Sunshines
With the hot weather in full swing, we've decided to share a Dutch Oven Recipe which is a little lighter than the usual roasts and stews. We're going to show you that even all you veggie worshippers can enjoy cooking with a Dutch Oven.
This recipe for stuffed baked squash follows the theme of the one stop pot method with minimal clean up as it turns the main ingredients into an edible cooking vessel.
1 Butter nut squash, halved and seeds removed
Handful of sliced mushrooms
A finely chopped red onion.
A finely chopped clove of garlic.
A teaspoon of crushed coriander seeds or powder.
2 sprigs of finely chopped fresh rosemary
5 sun-dried tomatoes, chopped
Freshly ground salt & pepper
½ a handful of pine nuts
Pinch of dried chilli, go easy.
100g basmati rice
Cut the squash in half length ways then using a spoon, scoop out the seeds and some extra flesh. Finely chop the flesh & seeds.
Using the up turned lid of your Dutch Oven as a frying pan put 4 lugs of olive oil onto it allow to heat up then put on about half of the chopped up squash and seeds, followed buy all of the sun-dried tomatoes, rosemary, onion, garlic, coriander, chilli, and mushrooms.
Fry for 4-5 minutes until softened then season with salt and pepper.
Next add the rice and pine nuts and fry for about another minute, then pack the mixture tightly into the cavities of the 2 halves of the squash and press them together.
Rub the skin of the squash with olive oil and wrap the whole thing in tin-foil as this will hold it together. Place inside you Dutch Oven, pop the lid on, place hot coals on the top and underneath and cook for about 1 ½ hrs.
About half way through you can turn the parcel to help to cook it more evenly. When you think it's ready, carefully open the foil and try a small amount of rice to see if it is cooked. If it's not quite done rap it back up and pop it back in for a bit longer.
